This is an authentic Italian styled rice recipe, cooked slowly to perfection. It is rich and creamyand goes well with chicken and meat dishes.
| Ingredients |
01. Olive oil – 8 tbsp 02. Butter – 2 tbsp 03. Risotto rice – 400 g 04. Mushrooms (cut in half) – 1 cup 05. Vegetable stock – ½ litre 06. Parmesan cheese – ½ cup |
| Preparation |
01. Heat butter and olive oil in a sauce pan. 02. Add the rice grains to it and mix well.
03. Next add the mushrooms and mix it all well. Pour the vegetable stock into the pan and let it boil well till the rice is cooked.
04. Add more hot water, if needed. 05. After the rice is cooked, remove the pan from the fire, sprinkle grated cheese over it to garnish, and serve. |
