Light Fruit Cake

A fruit cake that is filled with cherries, dry fruits and nuts, along with a zesty citrus flavor, that is both delicious and wholesome, without being too rich, for those who prefer it light.
01. Butter – 2 cups
02. Sugar (powdered) – 2 ½ cups
03. Egg yolks – from 4 eggs
04. Vanilla essence – 1 tsp
05. Brandy – 1 tsp
06. Rum – 1 tsp
07. Refined wheat flour (Maida) – 3 cups
08. Baking powder – 2 tsp
09. Dates (chopped) – ½ cup
10. Apricots (chopped) – ¼  cup
11. Cherries (chopped) – ¼ cup
12. Figs (chopped) – 1 cup
13. Cashewnuts (broken) – 1 cup
14. Orange peel – ½ cup
15. Lemon juice and grated lemon rind – from one lemon.
16. Masala powder – 1 tsp
17. Orange marmalade – 2 tbsp
18. Egg whites – from 4 eggs

01. Pre-heat the oven to 150°C.
02. Grease and line a cake tin and keep aside.
03. Beat the butter and sugar well together till soft and smooth.
04. To this, add and beat the egg yolks well, one by one.

05.  Mix the refined wheat flour (Maida) and baking powder together with the dates, apricots, cherries, figs, cashewnuts, orange peel, lemon juice, lemon rind and masala powder. Add this into the prepared cake batter.

06. Next, add the orange marmalade into it and mix well.
07. Beat the egg whites till stiff and add it into the cake batter. Mix well.
08. Pour this batter into the prepared cake tins and bake in the pre-heated oven for one hour.
09. Remove the cake from the oven and when it cools down well, brush a little jam on top of the cake.
10. The icing can now be done. Use the colours that have been shown in the picture. If not, any design of your choice can be done with the icing.

11. Here, cakes have been made in two different sizes and placed one on top of the other, after which the icing was done. Then the elephant, bear, tortoise etc., have been made using fondant icing, to decorate the cake.
