Try out something entirely new this New Year. The Prawn Tomato rice is a lip smacking meal and an ideal treat for sea food lovers
Ingredients 
01. Basmati Rice - 250 g
02. Prawns, cleaned - 100 g
03. Olive oil - 4 tsp
04. Garlic- 3 cloves, chopped
05. Onions, chopped - 1
06. Tomatoes, chopped - 1
07. Salt, pepper powder- to taste
08. Fish stock - ½ litre
09. Lemon juice, lemon peel scraped - of 1 lemon
10. Green olives, sliced - 3
11. Parsley, chopped - enough to garnish
Preparation 
01. Heat oil and sauté the garlic and onions.
02. To this add the rice and once it sautés well, add the chopped tomatoes and mix.
03. Now add enough salt and pepper powder to the fish stock and boil for 4 – 5 minutes.
04. Toss in the lemon juice, lemon peel, green olives and chopped parsely, mix well, closed and cook on a low flame.
05. Open after 20 minutes, garnish with chopped parsley and serve hot!
