Lemon Ginger Chicken

Deep fried boneless chicken pieces cooked with lots of vegetables in a thick lemon ginger gravy, this gorgeous chicken dish is indeed a delight.
01. Chicken, thigh portion, boneless - 150 g, cut to square cubes
02. Eggs, whipped - 3
03. Corn flour - 100 g
04. Oil - to taste
05. Ginger, chopped fine - 5 tsp
06. Celery, chopped fine - 2 tsp
07. Green chillies, chopped - 1
08. Garlic, chopped - 3 cloves
09. Salt, white pepper powder - to taste
10. Chicken stock - 75 ml
11. Lemon juice - 2 tsp
12. Onions, cut to square pieces - 1 small
13. Red capsicum, cut to square pieces - ½
14. Carrot, cut to squares - ¼
15. Broccoli - 5-6 flowers
16. Spring onions - a few
17. Tomato, cut to squares - ½

01. Dip the chicken pieces in the eggs, roll in corn flour and deep fry.
02. Heat oil in a pan, sauté the ginger, celery, green chillies and garlic along with salt and pepper powder.

03. Mix in the chicken stock and cook for 10 minutes.
04. Add enough salt and pepper powder, corn flour dissolved in water and lemon juice and remove from fire.

05. Heat some oil in a pan, sauté the  onions, capsicum, carrot, broccoli, spring onions, add the deep fried chicken pieces, the prepared sauce, garnish with chopped tomatoes and serve hot.
