Ratatouille Stuffed Brinjal

Baked brinjals stuffed with lots of mushrooms, capsicum and tomatoes and hoards of shredded cheese, what a cheesy way to welcome the new year.
Ingredients 
01. Brinjals - 3
02. Olive oil - a little
03. Onions, chopped - ½
04. Garlic, chopped - 3 cloves
05. Capsicum, chopped - ½
06. Mushrooms, chopped - 3
07. Tomatoes, skinned - 3
08. Salt, black pepper powder - to taste
09. Cheddar cheese, grated - 5 tbsp
10. Parsley, chopped - to garnish
Preparation 
01. Cut the brinjals into half length wise and scoop out the inside. Chop the pulp portion and keep aside about 10 teaspoons of it.

02. Heat oil and sauté the onions and garlic.
03. Heat oil in a pan, toss in the capsicum, mushrooms, tomatoes, salt, black pepper powder and the chopped brinjal pulp, mix well, cover and cook on a low flame.

04. Now stuff the mix into the brinjal moulds, place on a baking tray and cover with a foil paper.
05. Pre heat oven to 200◦C and bake for 20 minutes.
06. Sprinkle the grated cheese over the dish and bake uncovered for 5 minutes till they turn golden brown in colour.

07. Garnish with chopped parsley and serve hot.
