The sambal is again a very popular dish in Indonesian cuisine and here it is made with tofu, which is also widely preferred in that region.
Ingredients 
01. Tofu (Cottage cheese made from Soya milk. Also called Soya panneer and readily available in most supermarkets)    - 150 g

02. Salt  - to taste
03. Pepper powder - as needed
04. Cornflour - 200 g
05. Oil - to fry
06. Garlic (chopped fine) - 2 tsp
07. Chilli powder  - 1 tsp
08. Sambal paste  - 4 tsp
09. Tamarind paste - t tsp
10. Salt  - to taste
11. Sugar  - to taste
12. Onions (cubed) - 15 g
13. Capsicum (cubed) - 15 g
14. Spring onions (chopped) - 15 g
Preparation 
01. Take half of the cornflour, add salt and pepper powder as needed, and coat the tofu well with it. Leave overnight to marinate.
02. Just before frying, sprinkle a little cornflour on the tofu. Then deep fry in hot oil till crisp and keep aside.
03. Heat oil in a pan and saute the garlic and chilli powder.
04. Add the sambal paste and tamarind paste to it and continue to saute.
05. When it is sauteed well, add the salt and sugar and mix well.
06. Now add the onions and the capsicum and continue to saute.
07. Next add the fried tofu, toss gently and blend it in.
08. Make a paste of the remaining cornflour with water and mix it into the pan contents.
09. When the mixture thickens, add the spring onions, mix and remove the vessel from the flame.
