Sardines, cooked on a low flame in an earthen vessel, with a flavourful masala.
Ingredients 

01. Sardines (mathi or chaala) – 15

02. Button onions – 25
      Garlic – 1 pod
      Ginger – 1 one inch piece

03. Coconut oil - 3 tbsp
04. Curry leaves – 4 stalks
05. Crushed chillies – 2 tsp
      Turmeric powder -  a pinch

06. Water – 1 glass
     Salt – to taste
     Vinegar – 1 tsp

Preparation 
01. Cut, clean and wash the sardines well.
02. Mix together the button onions, garlic and ginger. Mash them and keep aside.
03. Heat the clay pot on the flame and pour a little coconut oil into it. Sauté the mashed button onions, ginger and garlic in it, along with the curry leaves.

04. When it is sautéed well, add the crushed chillies and turmeric powder and mix well.
05. Now add the water, salt and vinegar and allow it to boil.
06. When it boils, add the sardines.
07. When the sardines are cooked well, and the gravy is reduced, remove the vessel from the flame. Serve hot!
